Merry Mulching - Eat in Colour Christmas Coleslaw

All over the country thousands of people will be tucking into their left-over turkey on Boxing Day and many of us will be serving it with chips, pickles and sauces. Why not add our fabulous coleslaw? So simple and speedy to make, it brings crunchy colour to any turkey supper.

Ingredients

  • 300g of thinly sliced cabbage (red or green)
  • 2 carrots peeled and grated
  • 1 red onion finely chopped
  • 2 peppers (1 red, 1 green), deseeded and sliced
  • Salt and pepper to season
  • 3tbs mayonnaise
  • 1tbs vinegar
  • 1tsp mustard

Method

Put the thinly sliced cabbage, grated carrots, chopped onion and sliced peppers in a large bowl. Mix all the vegetables together.

Separately mix the mayonnaise, mustard, vinegar, salt and pepper, then add to the vegetables until everything is smothered in dressing.

Serve with your turkey and chips for the perfect Boxing Day supper.
